Spritz Christmas Cookies

Ingredients

  • 2 ¼ cups all-purpose flour
  • ½ tsp kosher salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 18 drps Sweetzfree
  • 1 large egg
  • ½ tsp almond extract or vanilla extract
  • Food coloring (optional: red and green)
  • Assorted Christmas cookie cutters

Instructions

  1. Preheat oven to 350°F.
  2. In a medium bowl, whisk together the flour and salt.
  3. In a large bowl (or stand mixer with a paddle attachment), cream the butter and Sweetzfree on medium-high speed until well blended.
  4. Add the egg and extract; continue mixing until fully combined.
  5. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
  6. Divide the dough into three bowls. Tint two portions with red and green food coloring, if desired.
  7. Roll each portion into 3-inch balls. Place on parchment paper, flatten slightly, and use cookie cutters to create holiday shapes.
  8. Freeze shaped cookies for 15 minutes.
  9. Transfer to an ungreased baking sheet and bake for 13–15 minutes or until just set.
  10. Cool and enjoy!
