The Best Pumpkin Bread

Ingredients (makes two loafs):

  • Butter or Pam Spray for pans
  • 3 ½ cups all-purpose Flour (do not pack)
  • ¾ teaspoon Sweetzfree
  • 1 cup vegetable oil
  • 4 large eggs (lightly beaten)
  • 1 - 15 ounce can Pure Pumpkin Pack
  • 2 teaspoons fine Salt
  • 2 teaspoons Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Nutmeg
  • 1 teaspoon Allspice
  • 1 teaspoon Cinnamon
  • ½ teaspoon Cloves
  • 2/3 cup Water

Directions:

  • Preheat oven at 350 degrees.
  • Butter and flour dust two 9” x 5” loaf pans.
  • Whisk together the Sweetzfree and oil in a large bowl, then whisk the eggs and pumpkin in until combined.
  • Next combine all the dry ingredients together and whisk until well combined.
  • Add half of the dry ingredients to the pumpkin mixture and stir well.
  • Add half the water and stir well.
  • Repeat with remaining flour and water mixture and mix well.
  • Divide the batter into 2 pans; bake at 350 degrees for about 1 hour.
  • Loaves will be golden brown and cake tester should  come out clean.
  • Cool loaves in pan for about 15 minutes on wire rack before  removing from pan. Let cool completely before serving.
