I have always loved to cook and create new foods. Here are just a few easy ideas for low carb/calorie/fat treats and beverages.
One of my main dilemmas when dining out, was what soft drink to order. I dont want caffeine or sugar. When I could find Diet Coke, I could rarely find caffeine free Diet Coke or Sprite. Ice tea, while a nice occasional treat, also had caffeine, but being very sensitive to the freshness of tea, I usually did not care for it. Here is how I solved my dilemma, and know I can now always get a refreshing, zero carb/calorie/caffeine soft drink.
Order a club soda with lime, squeeze the lime into the soda, then add a few drops Sweetzfree! YUM! This tastes very similar to Sprite, but with no Aspartame, and the associated aftertaste it comes with.

Recipe I came across looking for a high fiber easy muffin. This one is really amazing, VERY low carb and tastes really great for a sugar free , high fiber low carb baked good. The credit for this recipe goes to Matt & Megha from ketoconnect.net. With their permission I have swapped the sweetener from the original recipe to use Sweetzfree. They are really amazing. HIGH FIBER LOW CARB MUFFINS
Nutrition (per muffin)
Net Carbs: 0.6g
Servings Prep Time
12 muffins 5 minutes
1 cup ground flax meal
1 cup oat fiber
8 tbsp Heavy Whipping Cream
4 large eggs
4 tbsp Butter
1/4 - 1/2 tsp Sweetzfree to taste ( we like them on the sweet side so use 1/2 tsp)
1 tsp Baking powder
1/2 tsp Baking Soda
2 tsp Cinnamon
1/2 tsp Vanilla Extract
1/4 tsp salt
Additional options, blue berries, some chocolate chips,. sugar free or regular, depending on your needs
Combine dry ingredients and set aside.
In another bowl melt butter
Add eggs, Sweetzfree, heavy whipping cream and vanilla and combine.
Add dry ingredients to wet mixture and combine well. Dough will be thick and sticky in consistency.
Grease muffin tin or place cupcake papers into muffin tin and distribute the mixture evenly among 12 muffins.
Bake at 350 for 15- 16 minutes. Use toothpick to test once done.

Crustless Pumpkin Pie
One small can pumpkin ( approx 15 oz size)
6 TB original eggbeaters
24 drops sweetzfree
1 Tbls Pumpkin Pie Spice
pour into small pie microwave safe plate microwave on high until done
about 8 minutes
The test is: if a knife is put into the pie about two inches in from the outside and comes out clean, it's done
1/8 of pie is approximately 40 calories and 55 calories with 2 TB light coolwhip

Almond Butter Coconut Cookies (no flour needed)
1 c. almond butter
3/4 cup unsweetened shredded coconut
1 large egg
1 tsp vanilla
1 tsp baking soda
1 1/2 tsp Sweetzfree
Preheat oven to 350°
Combine all ingredients until combined and scoop cookies onto a parchment paper lined cookie sheet. Flatten cookies slightly using a fork and bake for 12-14 minutes or until golden brown.
Pina Colada Cottage Cheese (or Ricotta) snack
1/4 tsp KoolAide Pineapple drink mix
1/2 tsp Cocoanut Extract
3 or 4 drops (to taste) Sweetzfree
1/2 cup 2% Cottage Cheese or reduced fat Ricotta Cheese
Mix together. eat!
Fresh Old Fashioned Lemonade
1 large fresh lemmon
24 ounces cold water
6 or more (to taste) drops Sweetzfree
Squeeze lemon or ream with citrus reamer, into glass. Add Sweetzfree, stir with ice. Very refreshing and addictive on a warm summer day.
Dianes Guilt Free Cheesecake cupcakes
16 oz light Cream cheese
1/2 cup 2% Small curd cottage cheese
2 TBS reduced fat Sour Cream
1/2 teaspoon Sweetzfree
1/2 tsp Vanilla extract
1/4 tsp lemon juice
3/4 cup eggbeaters
2 TBS unsweetened cocoa powder
2 TBS fat free milk
1 tsp I Can't Believe It's Not Butter Spray (poured from opening the bottle)
( or you could use any liquid margarine or butter)
1/4 tsp Sweetzfree
1/4 tsp Vanilla extract
To make cheesecakes:
Preheat oven to 350. Spray 12 muffin tins with butter flavor PAM. Blend all cheesecake ingredients in a blender at medium speed, to yield a thick wet batter. Place 1/4 cup batter in each muffin tin, and bake 25 minutes, or till toothpick comes out clean from center of one of the cakes. Remove from oven and cool.
Mix all icing ingredients together well, and spread a thin layer on each cake. I finished it off with a light dusting of regular granulated Splenda.
1/2 cup Eggbeaters
1/2 cup 2% Cottage Cheese
1/4 tsp Vanilla extract
2 or 3 (to taste) drops Sweezfree
Wisk all ingredients together, or use immersion blender to break down all curd in cottage cheese. Heat omelet pan, and spray with butter flavor PAM cooking spray. Pour small amount of mix into hot pan, and cook till set, flip over and cook til set, slide out cool. This should make 3-4 crepes
1 bag shredded cabbage & carrots (cole slaw mix)
1/4 teaspoon salt
1/2 cup white vinegar
1/4 tsp Sweetzfree
1/8 cup water
1 teaspoon celery seed
1 teaspoon mustard seed
Combine and boil for 1 minute. Cool and pour over slaw and mix well. Freeze overnight in individual servings, thaw or microwave to enjoy.
You can double or triple this recipe and freeze it in plastic freezer containers. It thaws quickly and makes side dish or snack to pull out when you need something quick.
