Keto Tiramisu

Spring is in the air, the flowers are blooming again, and with Mother's Day around the corner, there is no better time like now to show Mom how loved she is by making her Tiramisu with Sweetzfree!

Cake Layers

  • 2 cups of Almond Flour
  • 12 drops Sweetzfree
  • 2 tsp baking powder
  • ¼ tsp salt
  • 2 large eggs
  • 1/3 cup of butter, melted
  • ¼ cup water
  • ½ tsp vanilla extract

Coffee Syrup

  • 1/3 cup espresso or strongly brewed coffee
  • 1 tbsp rum flavoring

Tiramisu Filling

  • 16 ounces Mascarpone cheese
  • ¾ cup heavy cream
  • 14 drops Sweetzfree
  • ¾ cup vanilla extract

Garnish

  • 1 tbsp cocoa powder
  • ½ ounce sugar free chocolate chips

Instructions - Cake Layers

  1. Preheat oven to 325 degrees.
  2. Grease a 15x11 sheet pan and line with parchment paper, greasing the parchment paper as well.
  3. In a large bowl, whisk together the almond flour, baking powder, and salt.
  4. Stir in the eggs, Sweetzfree, butter, water, and vanilla extract until well combined and smooth.
  5. Spread the batter evenly in prepared pan and bake for 15 to 20 minutes, until the edges are golden brown and the top is firm to the touch.
  6. Let cool completely in pan.


Coffee soak - Whisk together the coffee and rum flavoring; set aside.

Tiramisu Filling

  1. In a large bowl, beat the Mascarpone until smooth, then beat in 5 drops of Sweetzfree, and 2 tbsp. of the coffee/rum flavoring mixture until combined.
  2. In another bowl beat the cream and 5 drops Sweetzfree and vanilla extract until it forms stiff peaks, then gently combine the Mascarpone mixture by folding in.

To Assemble:

  1. Cut cake into pieces and place in 8x8 pan.
  2. Brush with ½ of the remaining coffee mixture and spread ½ the mascarpone mixture over top.
  3. Repeat with remaining cake, coffee mixture and mascarpone mixture.
  4. Dust the top with cocoa powder and sugar free chocolate chips. Refrigerate for 2 hours before cutting.
